As schedules get busier and more fragmented it is important to be able to whip up something quick, easy and tasty when needed for those busy weekday evenings. We take a look at a few of our favourite quick and tasty dinners which you can reach for when you need something in a hurry or even better, the children can have a go. Guacaroni by Bosh! This meal was one I would save for when I was on my own as it was quick, tasty and healthy, but then my children got wind of it and started demanding it was added as a regular.
It combines the comfort of mac & cheese but with the creamy and fresh taste of avocados and lime, plus a lovely chilli kick.

Tasty chicken with lots of nice flavour in the herbs and spices, and with plenty of colourful peppers and onion, we often add mushrooms too.
Then to serve, you have a wide range of choice, keep it simple with some soured cream or Greek yoghurt and avocado or why not add a bit of grated cheese and guacamole or if you are feeling really hungry then add a side of corn on the cob or rice, brown of course! One word of warning, if you have fussy children, then don’t mention the anchovies but please don’t omit, unless your vegetarian of course. One-Pan Fabulous Fish A simple dish which is tasty and only uses one pan! This delicious dish is ideal when you are looking to increase your fish intake and only uses 5 ingredients – although you can always add a few extra veg is you fancy it. The main base of the dish is rice, so it is nice and filling but full of flavour with the use of plenty of cherry tomatoes, olive tapenade and some fresh basil – perfect! Butter Bean and Chorizo Stew by Esther Clark Another recipe from BBC Good Food, but another good one.
This recipe only uses 4 ingredients and is on the table in just 20 minutes which is perfect for when you need a quick, comforting and filling dinner. With the chorizo, you know it will be full of flavour and the butter beans make it nice and filling.
You can stick to the recipe as it is or use as a base and add some garlic and more veg, why not try some sliced red peppers and courgettes, then fry gently after you’ve added the chorizo, followed by the tomatoes and butter beans.
